BERRY FRENCH TOAST CASSEROLE


INGREDIENTS

This is the perfect make-ahead breakfast for relaxing summer mornings. Wake up, remove from the refrigerator and bake. Enjoy the burst of fresh summer blueberries and raspberries.
5 cups French bread cubes (1/2 inch)
1 package (8 ounces) cream cheese, cubed
1 cup fresh blueberries
8 eggs
1/2 teaspoon ground cinnamon
1-1/2 cups milk
1/3 cup maple syrup

HOW TO MAKE BERRY FRENCH TOAST CASSEROLE

Place half of the bread in a greased PYREX® Easy Grab™ 3-qt Oblong Baking Dish. Top with cream cheese and berries. Sprinkle with remaining bread cubes.
In a bowl, whisk eggs and cinnamon until lightly beaten. Stir in milk and syrup; mix well. Pour over bread mixture. Gently press bread into egg mixture. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking. Cover and bake at 350° for 45 minutes. Uncover; bake 10 to 15 minutes longer or until a knife inserted near the center comes out clean.

TIPS:

SUMMER BERRIES:
Prepare this French toast with fresh raspberries or a mix of raspberries and blueberries.
MAKE AHEAD:
This casserole is great for company because it is prepared the night before.
