Tasty and Spicy lamb with griddled courgettes recipe
Dear friends Liven up lamb steaks with this easy recipe that combines the hit of harissa with fragrant herbs.
Ingredients
- 4 amb leg steaks, cut into chunky pieces
- 1 tbsp. olive oil
- 2-3 tsp. harissa
- Handful flat-leaf parsley, leaves picked and chopped
- Handful cherry tomatoes
- 250 g. bag spinach leaves
- Handful basil leaves, chopped
- Handful mint leaves
- 2 tbsp. extra virgin olive oil
- 1 good splash of mirin
- 2 garlic cloves, peeled and grated
- 3-4 courgettes, trimmed and cut into batons
Directions
- First, prepare the courgettes: mix together oil, mirin, garlic and season. Add courgettes, turn to coat, then set aside.
- Add lamb, oil, harissa and half the parsley to a bowl, and mix.
- Heat a frying pan and cook lamb on high, in batches, until cooked through.
- Meanwhile, heat a griddle pan and add courgettes (cook in batches, if necessary, so you don’t overcrowd the pan). Cook for 2min each side or until pale golden. Remove and set aside.
- Stir tomatoes, spinach, basil and mint into lamb and cook on a low heat until spinach wilts.
- Sprinkle over remaining parsley and serve with the courgettes.
