Tasty and Spicy lamb with griddled courgettes recipe


Dear friends ​Liven up lamb steaks with this easy recipe that combines the hit of harissa with fragrant herbs.

Ingredients

  • 4 amb leg steaks, cut into chunky pieces
  • 1 tbsp. olive oil
  • 2-3 tsp. harissa
  • Handful flat-leaf parsley, leaves picked and chopped
  • Handful cherry tomatoes
  • 250 g. bag spinach leaves
  • Handful basil leaves, chopped
  • Handful mint leaves
  • 2 tbsp. extra virgin olive oil
  • 1 good splash of mirin
  • 2 garlic cloves, peeled and grated
  • 3-4 courgettes, trimmed and cut into batons

Directions

  1. First, prepare the courgettes: mix together oil, mirin, garlic and season. Add courgettes, turn to coat, then set aside.
  2. Add lamb, oil, harissa and half the parsley to a bowl, and mix.
  3. Heat a frying pan and cook lamb on high, in batches, until cooked through.
  4. Meanwhile, heat a griddle pan and add courgettes (cook in batches, if necessary, so you don’t overcrowd the pan). Cook for 2min each side or until pale golden. Remove and set aside.
  5. Stir tomatoes, spinach, basil and mint into lamb and cook on a low heat until spinach wilts.
  6. Sprinkle over remaining parsley and serve with the courgettes.
